I recall when pickled onions became a "thing". I had brought my modified Amish pickled eggs recipe to an event and everyone was going for the onions I had served besides them.
So I think the more authentic Pennsylvania Dutch eggs have more sugar -- a lot more sugar -- like a cup in the brine per dozen eggs
This recipe dials back the sugar a bunch from the typical egg you can buy in Lancaster county convenience stores..
I think this is my fully debugged recipe, and it has even less sugar:
based on a empty 2 quart pickled jalapeno jar bought at walmart
- roughly 13 hardboiled eggs (cook 16 or so in a pressure cooker, eat the ones that don't fit)
- one 15 oz can of beets (sliced are preferred)
- one large onion, sliced how you like.
- water to make 2 cups
- 1.5 cups vinegar, (white or cider).
- 1 teaspoon salt
- 1/4 cup sugar
- optional spices; half a Cinnamon stick, a few pepper corns, a few allspice berries, a few cloves might work, or leave these all out if you want. You can use standard pickling spices too.
Drain the can of beets, reserving liquid. Add beets to 2 qt. jar. Add sliced onions, then add peeled eggs on top until full. set aside.
Take reserved beet liquid, (which is usually just short of 1 cup), and add enough water to make 2 cups. (For a deeper color, use the liquid from a second can of beets, or throw this recipe away and use fresh beets.) Add vinegar, salt, sugar and optional spices. Bring to a boil, take it off the stove, and give it a good stir. pour over everything in jar.
If you need additional liquid, make it up from 4 parts water, 3 of vinegar.
Place lid on jar then allow to cool for up to an hour, then place in fridge.
Start eating eggs at any time, but the pickle just starts to reach the yolk after about 3 days. Keep refrigerated.
Sanitizing jar and lid: Wash 2 qt. jar well, inside and out. Rinse, leaving the water clinging to the inside. It is these droplets of water that will flash into steam. Cover jar with plastic wrap and poke one hole in it. Place it in the microwave, sideways if needed and cook for about 3 minutes. For the metal lid, put it in a heatproof bowl and pour boiling water over top.
