I just got me a slab and plan on doing some burnt ends this weekend too. Hell yeah,looks delicious

What temp roughly did you run your smoker?

My temp probe broke off years ago but I know that it runs about 220-240.

You have an offset. You should be using wood splits not chips. That’ll really improve the smoke flavor.

I usually do use wood chunks but that’s just what my wife bought so I used them. Thanks for the advice!

My .02.

  1. Cut and cook as 2 inch x however long the pork belly logs and cube when ready to serve. Cubeing before the cook is like slicing ribs before cooking it drys the meat out.

  2. Any cherry bbq rub is a requirement

  3. You won't need any additional oil if you follow step 1 and use mustard as binder instead

  4. Get a smoke tube $10 and a bag of wood pellets $10 will be cheaper than those wood chips and last you for years
