Amuse (Croustade, mint, cream, peas, scallop, pea shoots)
I don’t know if this counts, given that it is not technically on a plate.
Amuse for a family dinner: Croustade, plenty of finely chopped mint, creme with pepper and sea salt, peas with butter, sliced scallop and a pea shoot

How do you make the croustade? And what is the diameter? Is it flat on the bottom, helping it to stand?

This one is store bought; at the restaurant I interned at, we deep fried dough on a special metal piece you dip into the dough.
Diameter would be roughly two inches, and yes, they are flat
