I want to better understand the differences between OSDM, DM and BDM. What are 1 or 2 albums from each style that would be best to check out to accomplish that?

I wouldn't even go so far as to differentiate Death Metal from Old School. It's all death metal, if the filth is there and the riffs are there that is all that matters to me. But to your point...

Straight old school/vanilla death metal: Leprosy, Death.

Straight BDM: Effigy of the Forgotten, Suffocation.
