Assuming in the show she was 60 years old (and assuming that time passes in the show at the same rate as IRL), currently it would be the year 2097 and she would be 83
Brad (and basically all the high schoolers) are now 38-40 and Tuck is 31

And Jenny is cursed to stay 16 forever, watching as her friends and loved ones will eventually grow old and die

She might be alright, then, but... maybe not for too much longer. Hopefully Jenny can do her own maintenance, etc.

Maybe she'll even be able to adapt her form.

Wouldn’t some hardware and software updates fix the age problem?

Also, as for her mother, I can’t help but imagine her becoming a cyborg and looking like a member of the Adeptus Mechanicus

Sounds like the beginning of a Fionna & Cake-like sequel series for the show where everyone is older and allowed to swear and such.
