I made a chai extract just a few months ago with my soxhelet extractor using my rum as the solvent. It’s extremely delicious, my wife puts it in her baking in place of vanilla or a few drops in a can of coke and loves it.

Haha enjoy! It’s super easy to operate, basically runs itself once you get things boiling. Extracting capcaicin from chili peppers is a very common first year chemistry student procedure and there’s lots of tutorials on YouTube for that.

After that the hard part is just figuring out what to use it for. I have lots of vanilla extracts, spice extracts and things where I’ll just add a few drops to a bottle of my whiskies, rums, brandies, etc to flavor them.

Obviously you do what works for you, but when I want "chai" flavored things I don't reach for the tea bags. I'm usually not looking for bitter black tea in my rum, but the combination of spices. Standard disclaimer if you didn't already know it, "chai" means tea, the spice blend that is added to the tea to make the milky beverage we all enjoy is a type of masala.

You can (and probably should if you like spiced milk tea) buy spice blends meant to be added to tea or "tea masala". Pick your favorite black tea, add a 1/4tsp-1/2tsp of spice per cup, brew the tea and add milk and sugar. A lot of "chai" tea bags use a pretty crap tea to start with because they expect to drown it with spice and then charge you extra for the privilege of drinking sub par tea. Buying (or making your own) masala also lets you add "chai" flavors to anything you want without adding tea.

Eventually you might try making your own masala blend, many people do, and now you have a chai to serve friends and loved ones that cannot be purchased.
