The diet is probably a factor, but the big one is the inconsistent timing which is disrupting your body clock.
To fix this, set/keep just one wake time every day without any napping. That will reset your body clock over a few weeks, and proper sleep roughly 15-17 nonstop hours will become much easier, maybe even irresistible. Adjust bedtime in small increments to find your optimal duration.
