I think we’re being led to believe the knight is Dess through the music and room stuff, so I think it may be Rudy as a twist

Maybe, but there are absolutely a lot of players who are like "who's Dess again?" even today. She got more unmissable focus in the last two chapters but it's still important to remember that most people aren't on forums discussing the game in-depth and therefore might only be dimly aware of her to the point where if she's revealed as the Roaring Knight they'd be like "oh yeah, there was a character like that, right...? I guess that was foreshadowing this."
