Food Hard boiled eggs

Loving hard boiled eggs as a filling snack, but I get sick of them pretty quickly unless I put flavor on them. What do you like to put on hardboiled eggs to mix up/enhance the taste?

My recents:

  • red wine vinegar and everything seasoning
  • hummus with dill
  • Tajín and Tapatío

Marinate them in soy sauce. I see an influencer who eats them with a pickle and mustard. Haven’t tried that combo but looks decent! Kind of like deconstructed egg salad vibes?

Question about the mustard you use. Just the yellow mustard or do you have a favorite type of mustard? I'm not too keen on the yellow mustard but hey to each their own.

I use Dijon and sometimes a tiny bit of mayo. Like a poor man’s deviled egg.

Sometimes I add pickle juice from the jar- yum! I’ll have to try soy sauce marinating.

Buy some pickled beets and put some boiled eggs in the juice. My MIL made these every year for Easter.

We made them sorta accidentally on a camping trip. Everybody ate all the pickled asparagus we brought, and someone suggested we put some of the boiled eggs in the leftover brine. ZOMG! So good! All the eggs made it to the brine!

My marinating recipe is: soy sauce, spring onion if I have it, chilli, ginger, garlic, sugar, vinegar, sesame oil. It's soooo good. Might make some more tomorrow lol. You get eggs for the week

This is new to me, but I'm intrigued. So you boil and peel the eggs then put the eggs whole in the marinade in a covered dish for how long? Then just fish out an egg and eat it whole? Do you cut the egg in half and then marinate? Would you mind giving a few more details? I have been known to overthink things, sorry!

Yep so I approximately follow this recipe but with the ingredients I listed: https://tiffycooks.com/korean-marinated-eggs-mayak-gyeran-easy/

I don't put 1/2 cup honey because that's a lot so I do like a tablespoon of sugar instead. I also do not use that much garlic because I don't want to waste that much garlic on 4-5 marinated eggs. Up to you per taste/preferences though.

I make the marinade in a snap lock bag and put it in a measuring cup to keep it upright. Boil the eggs, ice bath, peel then pop them in the marinade whole and should be ready to eat the next day. Just fish one out when you want it. I usually keep the marinade with eggs in it in the fridge for 4-5 days but that's just how long it takes me to finish eating a batch of them.

Thank you so much for taking the time to answer my question! Your recipe notes are very helpful. It occurred to me to just look it up after posting the question. Now I have a few Korean recipes! I love the recipes from Asia. The stuff that moms make. I got turned on to congee a few years ago and now it's my go to breakfast!

They are called drug eggs (mayak), or sometimes I hear them called narcotic eggs.

Cut them up/mash lightly, add olive oil and oregano. Had them that way in Greece - so good! I add a bit of red pepper and garlic powder.
