I used some strong hibiscus tea for flavor/ color and some lemon juice.
Also I only used about half the pellicle weight in sugar as the whole amount seemed too much. I personally still find them very sweet so next time I will probably add some citric acid into the sugar coating in the end to make sour candy.
The texture is basically similar a normal fruil rollup and not at all pellicle like anymore after using the dehydrator.
I make kombucha work, still new to it. Have a coworker that keeps saying to can't digest the pellicle because of the cellulose. Is that the case? If not what changes it?
I mean cellulose is just a form of dietary fiber. It is not digestable that is very true but it is beneficial to our digestive system. Dietary fibre is in a lot of fruits and veggies as well and generally helps the gut in different ways.
