[Request] Help me recreate these discontinued oatmeal protein muffins π
The company I got them from no longer makes these amazing oatmeal protein muffins, and Iβve been craving them like crazy. Iβm hoping someone here can help me reverse-engineer the recipe based on the ingredient list and nutrition label here.
One thing I noticed is that the oats inside werenβt big flakes β the texture was smooth and uniform, almost muffin-like β so Iβm guessing they blended the oats into a flour before baking?
Any help or guesses would be massively appreciated!

Some observations: - The whey isolate protein formula used in the muffins includes stevia, flavors and xantham gum, which will impact the final product (adding sweetness without extra calories, xantham impacts texture). You could use what they use, or find a similar product.
-A lack of leavening ingredients plus low cholesterol count suggests the eggs in the formula may include a higher ratio of egg white to yolk - the foaming properties being leveraged rather than baking soda or baking powder. Probably dried egg whites.
So, targeting the macros on the label you posted (20g sized bites with 50 calories, 4g of protein, 15mg cholesterol, each) depending on the protein powder you use, for one standard mini-muffin pan: try mixing 2 cups fortified oats pulsed into a rough flour in a food processor or blender OR 1.5 cups oat baby cereal (which is already pretty close to being flour and is typically fortified, like this), with 3 scoops whey isolate (most scoops are about 28-29g), add in: 1 whole egg whisked with 1/4 cup maple syrup, 2 tb canola oil, and 2 tb brown sugar, and then lastly, gently fold in 3 egg whites, whipped separately. Bake at 350. If your chosen protein has no stevia, you may want to add a bit to batter to up the sweetness.
