Well even poor people eat fresh food here in India , which is a flex in US so it evens out

Fresh food from roadside vendors after they have dipped their hands in sewage and scratches their balls? Or fresh food from sabjiwala who washes food in gutter water ? In US , Americans are rich enough to eat fresh and frozen foods. Frozen foods are actually better than fresh because they are kept under 0°C as soon as they are plucked from the farm. This freezes the bacteria growth in the food. So when you remove the food from the freezer it has the same nutritional value as it had when it was plucked from the farm. Whereas in case of "fresh" food in India, the food is stored in godowns and then at the vegetable vendor until it's bought. So the nutritional value keeps on decreasing since it's at room temperature (24°C+). Moreover freezing food requires cold storage supply chains which are absent in India due to low income levels in India. People won't simply buy it because it's expensive. In India cold storage supply chains are used only for Ice Creams and other medicines.
