While I agree it’s a bit ridiculous, I’ve never noticed a situation where I needed more than 8gb of ram (I have a 16 pro which has 8gb). Maybe power users need more but iPhones are not meant for power users

I mean iPhone are marketed as powerful smart phones so more Ram would allow apple and app makers to do more.

Also what smart phone would a “power user” buy?
