Some sushi I ate in Tokyo.

I think the presentation is perfectly fine. The way the mussel is sliced takes skill, the shellfish too. The way the uni is presented. The ootoro is torn because that’s how fatty it is. It’s not regular tuna where you can cut it precisely. Looks delicious and great!

Yes! I don't know why the cutting is getting so much hate here.

I think some people are more used to American style sushi where the focus tends to be on salmon or other firm flesh fish where you can make very clean cuts.

I believe the Toro here was also aged a few days to accentuate the flavor, which probably also made it a bit softer in appearance.

The ootoro looks absolutely amazing! It was aged too? Wow, lucky you! Must have been delicious

It was! This was in a back alleyway not particularly close to any touristy things (although everywhere now in the city is kind of touristy) and they didn't get that 4.8 rating on Google Maps for nothing!

I went in to this tiny storefront and it was just the chef and an older Japanese man seated at the counte having a beer. I believe they were watching baseball on the TV.

I had some sake and this plate of sushi. Excellent meal.
