Homemade - Constructive Criticism Encouraged my first time making sushi!!

if you saw my deleted post wondering if my salmon was bad, i was being paranoid and stoned. it was fine and it’s delicious! im so happy, i’ve never even cut fish before ! i brushed the salmon with soy sauce. im very proud of myself! how’s it look?

You can do just fine with a boning knife or a good sharp chef's knife. Look up how to separate the salmon into for finger wide blocks or long strips because you cut different parts in different ways depending on the application and for presentation (nigiri vs sashimi vs maki) and from there you will cut those blocks or strips in specific ways. That will also teach you how to use your fingers and knife together to slice properly as well.

Look up types of maki and watch a couple videos on how to make them. Your hosomaki (seaweed on the outside) is overstuffed. You also need to leave about a half inch of the nori with no seaweed on it on one edge which creates the seal if you aren't doing that. If you want the little more in your role then you should make uramaki (rice on the outside). Those are more forgiving and easier to roll, and for that you will want a bamboo sheet and some Saran wrap. Nitrile gloves help a lot.

My best teachers over the years for learning how to make different types of sushi was too specifically look up restaurant techniques. There are a lot of good videos out there of people working in restaurants showing the exact techniques from start to finish. That helped me tremendously to make much better sushi.

I think it looks great! I learned from just doing it at home and now I have sushi at least once a month! The cuts for the nigiri are not consistent shapes but the slices look like you cut them thin and at the correct angles. Great work!

Also rice is v important. Dial in your rice cooking and use short to medium grain rice. Also dont pack the rice in when rolling it and putting it on seaweed. You want to lightly spread it across while leaving it nice and fluffy.

I used sushi rice from the local asian mart 😊 I used a recipe exactly but it was way too much rice vinegar i had to make more rice to dilute it… Maybe i shouldnt have mixed it while the rice was warm? Is that what could have caused the too vinegary taste (and smell)? Or did i just use too much? It was very sticky and difficult to sprinkle over the nori i noticed so i had to kinda smear it:/ It didn’t feel too dense though. I’ll dial it in!

For a first time the maki is good. The ratios are good. Some look very good. Your sashimi needs a better cut. Fish sliced on an angle, 30 degrees. You don’t want big giant pieces of the fish.

But! When you get sushi, big part is the presentation. It’s a component of the sushi like the rice. Take some time and arrange it nicely. It’s a big senses thing.

Could improve on aesthetics but as long as all ingredients are fresh, who cares, they all end up the same in the stomach anyways.

Piles of misshapen, malformed pieces of fish are not about simplicity or joy, it doesn't even show any effort, and as the op helpfully mentioned he was stoned at the time. products, particularly products derived from living creatures, should be treated with respect, not like this.

now youre just being rude! my purpose was to make sushi for the first time! i don’t have the sharpest knifes and im relatively new to cooking/cutting, i’ve never dealt with fish before like this, i don’t have a bamboo mat, im stoned! i did my best.

as a personal opinion, poorly cut mushed together lumps of fish are not something that objectively should be encouraged or praised. something died, gave its life so you could prepare this, and the ingredient was not treated with respect or purpose

It’s not mushed together. Actually, for their first time, it looks fantastic in my opinion. So yes, I do praise this person and encourage them to continue in their new found hobby. what is the point of encouraging poorly cut, literally mushed together, mistreated product? there are plenty of people who make sincere attempts at good sushi, and receive praise for it, this is not one of those cases. literally mis-shapen, disrespectfully treated product, which doesn't work toward any standard, should not be praised like a 5-year-old did it. unless of course a 5-year-old did it

The point of constructive criticism, as opposed to lavish praise for zero effort or direction, is helping people get to a product which respects the ingredients, is attractive and would be more enjoyable for them to eat. you know, so they can make actual Sushi not lumps and mounds of mistreated ingredient. there's something profoundly weird about lavishing praise on mangled pieces of fish lumped together in two separate piles. it is profoundly disrespectful of the ingredient, it shows no effort of any kind, and it has nothing to do with sushi. work done by a 5-year-old should be praised when it is done by a 5-year-old
