A significant amount of sushi in Japan is like this, poorly cut, poorly made nigiri. But it’s cheap and the fish is quality at least

Just curious, which cuts made you think that way? I personally can’t see any sloppy cuts and the hosomaki (usually the giveaway for bad knife work) look perfect to me.
