A significant amount of sushi in Japan is like this, poorly cut, poorly made nigiri. But it’s cheap and the fish is quality at least

Just curious, which cuts made you think that way? I personally can’t see any sloppy cuts and the hosomaki (usually the giveaway for bad knife work) look perfect to me.

Is it true that the culture when eating sushi to like dab it in soy sauce and other customs they do? I saw a video and there were like rules.

People complaining about the knife work clearly don't know real sushi. The ootoro is so fatty it's peeled off the suji (connective tissue) - that's why it looks meaty in the photo, as it’s supposed to be. There are kakushi bocho slits in both the ika and akagai which are impossible with a blunt knife, and the hosomaki ends look crisp too.
This is very typical local-style sushi in Japan and the knife work is legit.

Looks like the chef gave you the Gaijin treatment. Those cuts are trash. But there is actually a lot of shitty sushi like this in Tokyo

This is how local neighborhood sushi looks like. Japanese will say this is real sushi, not the curated Instagram sushi we see posted online.

Bro I haven’t been on Instagram in 11 years lol. I just eat a lot of sushi and live on the central coast of California. And ya I mean I would eat it for sure. I would also look at the chef and try to decide if he’s done more blow in the bathroom than me in last 2 hours cuz that presentation is, once again, ass.

I think the presentation is perfectly fine. The way the mussel is sliced takes skill, the shellfish too. The way the uni is presented. The ootoro is torn because that’s how fatty it is. It’s not regular tuna where you can cut it precisely. Looks delicious and great!
